Chicken Parmesan
This recipe shows just how versatile our products are—you don’t have to cook Greek food to enjoy them (though we still think Greek food is the best 😉). Ready in just 45 minutes, this chicken parmesan is perfect for impressing guests or making an easy, delicious weeknight dinner.
Ingredients
2 (12-ounce) boneless, skinless chicken breasts
2 cups all-purpose flour
4 large eggs, beaten
2 cups bread crumbs
Kara’s Greek Seasoning
Kosher salt and freshly ground black pepper
½ cup olive oil
1 pound fresh mozzarella cheese.
thinly sliced3 cups favorite store-bought marinara sauce, warmed
Freshly grated Parmigiano Reggiano cheese
2 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
3 ounces baby arugula
Recipe:
Preheat oven to 425°F.
Slice chicken breasts horizontally into cutlets and pound to ¼-inch thickness.
Season chicken with Kara’s Greek Seasoning and bread by dredging in flour, egg, and breadcrumbs.
Pan-fry chicken in olive oil until golden on both sides.
Transfer to a rack on a baking sheet, top with mozzarella, and bake until melted and lightly browned.
Serve topped with warm marinara and grated Parmigiano Reggiano, with arugula dressed in lemon juice, olive oil, salt, and pepper.
